Ingredients (6)
- 6 lemons, scrubbed, roughly chopped
- 2 cups frozen raspberries
- 1 1/2 cups caster sugar
- Raspberries, to serve
- Lemon, sliced, to serve
- Fresh mint leaves, to serve
Method
- Step 1 Place 1/2 the lemons, 1/2 the raspberries, 1/2 the sugar and 1 cup cold water in a food processor. Process until finely chopped. Strain mixture into a large bowl. Repeat with remaining lemons, raspberries, sugar and 1 cup cold water.
- Step 2 Stir 1 1/2 litres cold water into lemon mixture (see note). Cover and refrigerate for 3 hours or until chilled. Transfer to a jug. 3 Serve lemonade with extra raspberries, lemon slices and mint leaves.
